Mantle Group Hospitality is one of Queensland’s largest and longest running food and beverage operators.
Mantle Group Hospitality was established in 1979 and in 1982 became one of the first retailers in Queen Street Mall.
Today, Mantle Group Hospitality operates Queen Street’s Pig ‘N’ Whistle, Jimmy’s on the Mall and Milano along one of Australia’s busiest pedestrian malls. The group also includes six other Pig N Whistle restaurants (Riverside, Indooroopilly, Brunswick Street, King George Square and West End), the State Library Café, The Charming Squire, Phuc Deli-Viet Restaurant Indooroopilly, Phuc Deli-Viet Restaurant West End, Tai Tai and a catering company Mantle & Cook. Mantle Group operates two venues (Jimmy’s On The Mall and Pig ‘N’ Whistle Queen Street), 24 hours, seven days a week. Both venues have been pivotal in providing a safe environment and a constant presence within Brisbane’s CBD.
Fully integrated business
Nine years ago, Mantle Group Hospitality built a large purpose-built commercial kitchen in East Brisbane, which services and streamlines all of our hospitality operations. The business is fully integrated – developing their own coffee, wine and beer brands, growing and sourcing their own beef, creating new sauces and dishes in their central kitchen.
To ensure the ingredients used in their venues are consistently top-quality, Mantle Group Hospitality has removed any room for error by cutting out the middle men when it comes to their suppliers. Over the past 38 years, Mantle Group Hospitality’s customers have come to appreciate their attention to detail, use of fresh produce and, importantly, that meals are consistently top-quality.
Paddock to plate
Where possible, Mantle Group Hospitality likes to source and manage every step of the process from paddock to plate. Mantle Group Hospitality has its own herd of Black Angus cattle in the hills of Bilambil Heights, NSW, which provides all of the restaurants with top-quality veal. Organic herbs, curry leaves, fruit, kaffir limes and galangal are grown at Mantle Group Hospitality’s own specialty farm at Pullenvale in the western suburbs of Brisbane.
To assist with their paddock to plate ethos, Mantle Group Hospitality operate a central production kitchen with a butchery, patisserie, coffee roaster, saucier and cook chill facility. Following the example of major restaurant groups in Japan and Europe, Mantle Group Hospitality has developed equipment and systems to centrally produce both ingredients and meals to a consistently high standard.
Based out of the central kitchen, Mantle Group Hospitality has their in-house butcher who handles all cuts of meat for the venues, including creating their own specialty sausages. Alongside the butcher, Mantle Group Hospitality’s central kitchen has a full time French pastry chef who makes all of the pastries and desserts for all venues. The pastry chef and butcher are joined by a chief saucier who makes all the sauces and gravies.
Mantle Group Hospitality also manufactures their own furniture, design and build their own premises and through Mayfair College (our Australian Government accredited training organisation or RTO) train staff to Diploma level.
Reducing group’s carbon footprint
Mantle Group Hospitality’s systemised and internal processes also assist in reducing the group’s carbon footprint and cutting costs associated to suppliers, which are then passed on to the customer.
All aspects of Mantle Group Hospitality – service, product, décor and management – are directed at treasuring customers. Based on this foundation, Mantle Group Hospitality has a business which is sustainable and has room for strong growth.
It is the reason why they are still operating today, after 39 years of business, where many of their competitors have closed their doors or are struggling in this environment. These processes will also set them in the right path for the next 39 years.
