The Squire’s Landing is now hiring a Sous Chef, Chef de Partie, Commis Chef, Cooks and 1st and 2nd year Apprentices.


The roles

However all the roles will require you to help the Squire’s Landing through its opening stage and play your part in establishing us a a market leader. As a team we must  deliver high quality dishes, consistently well, in a fast-paced, busy environment. You will work with a great team led by our Executive Chef and Head Chef.   • Reliable, level headed, punctual and organised.
  • Passionate about what they do, innovative and experienced.
  • Work fast, clean and motivate team by leading by example.
  • Deliver great food consistently while managing their daily tasks.
  • Experience in a similar role will be of a distinct advantage, but a great attitude is a must.


To the right person we offer a great salary ($50,000.00 – $64,999.00) and conditions in a well-managed environment with full support from our Executive Chef, Head Office and Central Kitchen.


About the venue and the company

The Squire’s Landing will bring to life the story of the original rogue, James Squire. Stemming from origins as a convict on the First Fleet, Squire turned his life around and rose to become one of the governor’s guards, the father of 11 children and, perhaps most significantly, the colony’s first and most sought-after brewer. An impressive resume by anyone’s standards; he lived enough life for several men. With a venue design that embraces its history and evokes a sense of history and storytelling, an inspired menu and the full range of James Squire craft beers and ciders on tap, The Squire’s Landing will be the sort of place James himself would have loved to drink in. The Squire’s Landing has been developed in partnership with Queensland’s  renowned hospitality group, Mantle Group Hospitality (MGH). Ideally located in the cruise ship Overseas Passenger Terminal on Sydney’s Circular Quay. The venue is set to open in the coming weeks. The venue will have a premium restaurant with 270 degree views of Sydney harbour and two casual dinning spaces with a working James Squire brewhouse where customers can get acquainted with the brewing process, explore the James Squire craft beer range, all the while enjoying delicious dishes designed to complement the flavours of the beers.

In the architecturally designed kitchens (on both levels of the brewhouse), led by the Group’s Executive Chef, Deniz Coskun, unique coal-fired spits and a smoker will enhance the flavours of the meat which can be matched to an array of great-tasting James Squire beers. With sustainability and quality of produce in mind, The Squire’s Landing will source the highest-quality, fresh ingredients from local suppliers, and cook it over its wood fired equipment to deliver exceptional restaurant meals and bar snacks.

This will be the MGH’s 12th venue and second James Squire brewhouse so you can be sure you will be joining a well-established, family-owned, successful hospitality company with over 36 years’ experience in the industry. Mantle Group Hospitality is expanding with the addition of several new venues in Sydney throughout the next twelve months.
